Winter Salsa

I LOVE this time of year for many reasons - the cool crisp weather, the apples and pumpkins in abundance, the fall colors, etc.  However, I always find myself missing some of the great summer produce, namely tomatoes.  We eat so many delicious tomatoes in the summertime that nowhere near resemble the tomatoes you find in the stores year-round.  Salsa is one of those things we love to whip up with our summer tomatoes, but if you love homemade salsa all year long, don't fear!  This recipe uses canned tomatoes, and it is really delicious!  In fact, I make it a lot in the summer too, because it's so convenient, taking just a few minutes to whirl together, and it still has that fresh taste from the onions and cilantro.  Honestly, I couldn't believe how good it was the first time I made it and I have made it well over 10 times since.  Enjoy!

Green Enchilada Sauce

I was SO excited when I found this recipe!  I love this enchilada recipe, but I've hardly made it the last year because I hate buying the canned enchilada sauce.  It is full of nasty stuff and I can't find any that don't have hydrogenated oils and and a whole lot of other ingredients unnecessary for enchilada sauce.  I decided I just needed to make my own and discovered it was SO EASY.  This recipe is from the blog Our Best Bites and it made enough for 5 batches of enchiladas.  I wanted to find a can-able recipe, but I just poured it in pint jars and popped them in the freezer to use as I need them.  I made the enchiladas with the sauce the other day and it was amazing!  If you're trying to cut out processed foods and/or just want an awesome enchilada sauce recipe, this is the one!  And your body will feel great after eating it too.

Easy Pizza Sauce

This is so easy I feel silly posting it, but this is the recipe I always use for making pizza sauce.  It's simple and delicious, just what I like!  The recipe is so easy to remember too, so I never need to look it up.  Enjoy!

Cranberry Orange Sauce

I don't know how, but Thanksgiving is next week.  It really snuck up on me this year, and I completely forgot about some recipes I tried last year but never posted.  Well...here's one of them!  I made cranberry sauce from scratch last year and it was really tasty!  I was amazed at how easy it was.  It can be made a couple days in advance and it tastes great on a leftover turkey sandwich too.  Yum!

2-minute Teriyaki Sauce

I feel guilty that I haven't shared this recipe yet.  It is so super easy and tasty it's ridiculous!  I got this from my mom and it's great for a quick week night meal and tasty enough that you could make it for guests too!  It only has 5 ingredients - all of which I always have on hand.  I usually pour it over some chicken breasts and pop them in the oven for an hour while I cook some rice and veggies.  My mom would usually do something more exciting like spareribs or something, but it's so versatile you could do whatever you want!  Throw in a wok with your stirfry veggies or let it simmer in the oven with some meat.  Give it a try!  It's a gem.

Teriyaki Sauce

1/2 c. white sugar
1/2 c. ketchup
1/2 c. soy sauce
1 tsp. garlic powder
1 tsp. ground ginger

Mix all ingredients together until smooth.  Pour over desired dish.  Recommendations: pour over chicken breasts, pork spareribs, etc, and bake at 350 for about an hour.  Or add to your stovetop stirfry during the last few minutes of cooking.  Enjoy!

Homemade Pesto

Mmmm...pesto. Hopefully I'm not too late in getting this on here with those of you with mounds of basil to use up. This recipe is easy and tasty. Pesto can be used on pasta, sandwiches, pizza, savory tarts, etc. You can freeze it in individual containers and then pull out what you need when you need it. I hope you enjoy it!
