I made these at my parents' house several years ago and they were such a festive (and delicious) Christmas treat! It's kind of a tragedy I haven't made them since, but I'm hoping to remedy that this year. These are so cute and are actually pretty easy to make. My swirls weren't the most beautiful, but I'm sure you can do much better! These would make a great treat to bring to any holiday party or to bring to some friends this season.
Mini Raspberry Cheesecakes
For the crust:
1.5 cups graham cracker crumbs
4 T. unsalted butter, melted
3 T. sugar
For the raspberry swirl:
6 oz. fresh raspberries (you can use thawed frozen ones)
2 T. sugar
For the filling:
2 lbs. cream cheese, at room temperature
1.5 c. white sugar
Pinch of salt
1 tsp. vanilla extract
4 large eggs, at room temperature
Preheat the oven to 325 degrees. Line cupcake pans with paper liners. In a small bowl, combine the crust ingredients. Stir together with a fork until well blended and the crumbs are moistened. Press 1 T. of the mixture into the bottom of each cupcake liner. (Use a small glass or measuring cup or something to press down). Bake until just set, about 5 minutes. Transfer to a cooling rack.
To make the raspberry puree, combine the raspberries and sugar in a blender or food processor. Process until smooth, then pour through a fine mesh sieve to remove the seeds. Set aside.
To make the cheesecake, beat the cream cheese on medium-high speed in the bowl of an electric mixer until fluffy. Blend in the sugar until smooth. Mix in the salt and vanilla. Beat in the eggs one at a time, mixing well after each addition.
To assemble, spoon 3 T. of the cheesecake batter over the crust in each cupcake liner. dot a 1/2 tsp. of the raspberry puree in a few dots over the cheesecake filling. Use a toothpick or a wooden skewer to lightly swirl and create a marbled effect.
Bake until the filling is set, about 22 minutes, rotating the pans halfway through baking. They will look quite puffed initially but will return to normal quickly. Transfer to a wire cooling rack and let cool to room temperature. Chill in the refrigerator for at least 4 hours before serving.

Dark Chocolate Orange Lacey Cookies
I have been dreaming about these cookies ever since I made this last year at Christmas time. To me they just taste like Christmas. Almonds, orange zest, dark chocolate - they are perfect! You can make these several different ways, but I prefer them with chocolate sandwiched between them. (Who wouldn't?) Apparently they are a Trader Joe's knock-off. I've never had the Trader Joe's version but these are delicious! They are extremely thin, with crisp edges and slightly chewy middles. They are extremely addicting, so beware! I can't wait to make them again this weekend!
Dark Chocolate Orange Lacey Cookies
There is a waiting period after you mix these up before you bake them, so plan accordingly!
1/2 c. brown sugar
2 T. butter
1 T. vanilla
2 T. milk
1/4 c. honey
1/3 c. all-purpose flour
1/2 c. almonds, coarsely ground
1/2 tsp. cinnamon
1 heaping tsp. orange zest
1/2 c. dark chocolate (for dipping - or any chocolate you like)
Preheat your oven to 350 degrees. Line two baking sheets with parchment paper or silicone mats. In a medium saucepan, combine the butter, sugar, milk, vanilla, and honey and cook over medium to medium high heat until you reach a boil, stirring continuously. Once in reaches a rolling boil, let it boil for one minute and then remove from the heat and set aside.
In a mixing bowl, combine the flour, almonds, cinnamon and orange zest. Add this mixture slowly to the wet mixture until fully incorporated. Let the mixture rest for 20 minutes until cool enough to handle. If it is too stiff to work with when you return, reheat it slightly over low heat.
Drop teaspoon-sized balls onto your baking sheets, leaving about 3 inches of space between each because they will spread a lot. Let them cook for 6-8 minutes. If you want them crunchier like toffee leave them in longer. Remove when the centers are bubbling and they are a golden brown color. Let cool on the tray for 3-5 minutes before removing them.
Melt your chocolate in the microwave or in a double-boiler. Add a teaspoon or so of chocolate in between two cookies and sandwich them together. You can also wrap them into a tube shape while they're stills lightly warm and dip them in chocolate or just leave them plain. If your chocolate isn't hardening, you can put them in the fridge for about 15 minutes. Enjoy!

Sweet Potato "Casserole"
I don't know if we can really call this a casserole, but that's the name my husband's family uses for this favorite Thanksgiving side dish. But let's be honest here people, we should really be calling this sweet potato "crumble", or "pie", or "crisp" - you get the idea. Mashed sweet potatoes are combined with eggs, milk, butter, and sugar and then topped with a delicious crumble topping (you know - brown sugar, pecans, more butter, etc.) and baked until browned and oh-so-sweet-smelling. Everyone I've ever shared this with has fallen in love. It's sure to be a hit! I'll let you decide whether it should be served with the turkey or the pies...

Coconut Raspberry Ice Cream {dairy-free}
Another dairy-free coconut ice cream win! I made this for my husband's birthday and it was so delicious. You will not be missing the dairy at all with ice cream like this around! It is SO simple to make - only 4 ingredients. We used some frozen raspberries we had picked this summer and they gave it such a refreshing tartness that we loved. Give it a try and I'm sure you'll love it too!

Oatmeal Chocolate Chip Nut Cookies
Yummy!!! I went to make these cookies the other day and couldn't believe they weren't on here! These are my husband's favorite cookie. He loves oats in any form, but who can resist them in a cookie along with chocolate chips and nuts? Of course you can leave the nuts out if you like, but we love them around here. These come from my mother-in-law, with a couple adaptations, and are definitely a family favorite.

Fresh Apple Cake
Yum! This cake probably won't win any beauty awards, but who cares? It's delicious. My mother-in-law has a binder full of recipes she's given to all her children, and I'm slowly making my way through them. This is one that caught my eye, especially after we went apple picking a few weeks ago, and I decided to give it a shot! I actually changed a few things - subbing in some whole wheat flour, brown sugar, and oats, among other things - but it's basically the same recipe. I may or may not have had a piece for breakfast the next day, and I found it moistened a lot sitting over night. Both times were delicious. It tastes old-fashioned and homey and I love it!

Texas Sheet Cake
Ohhh yeah. Texas Sheet Cake, baby. So moist and delcious. This is a fairly simple cake with simple ingredients and a few odd-ball steps like boiling butter and cocoa together. Don't be alarmed, it comes together very easily and is a great dessert to bring to a party or feed a crowd because it makes a lot! This recipe comes from my mother-in-law and it's a winner! Enjoy!

Cinnamon Rolls
These are the cinnamon rolls you have always dreamed about. I went to make this recipe thinking I had posted it several years ago, and was saddened to see it wasn't here! What a tragedy! I had posted it on my family blog, but it never made it's way over here. Well I am repenting. These babies are sooooo tasty. We enjoyed them on Sunday and every day since...until they ran out too soon. Yikes! They certainly are addicting.

New York-Style Cheesecake
Oh my. This was our Valentine's Day treat this year and holy cow, will it be hard to top. Jeremy claims it is the best cheesecake he's ever eaten, and I think I have to agree. It was just perfect. Smooth and creamy with a great flavor and texture. This comes from America's Test Kitchen, so it's no wonder that it turned out so well. I followed the recipe to a "t" and it was amazing! No cracks, no problems.

Chocolate Chip Cookies
I know. Everyone has a chocolate chip cookie recipe they love, but in case you don't, I am posting this. And since it is my go-to recipe, I figured it needed to be on this blog! When I was in high school, I had a friend named Jeff who always brought snacks to our AP English class. Usually they were almonds or dried mangoes, but occasionally they were these cookies. He was a good friend and always shared. :) His mom made these often and shared the recipe with our family. We've been making them ever since! The trick is to not over-mix the dough and to take them out before you may think they're done. The result - an extremely soft fluffy cookie that is incredible fresh out of the oven but that stays soft for the next day too...if you haven't eaten them all by then....

Luscious Lemon Bars
First new recipe from Pittsburgh! If you didn't know, we moved across the country a few weeks ago, and are finally settled and really loving it here. I made these delicious lemon bars the other night when we went over to someone's house for dinner. They were a hit! I had a recipe that I altered quite a bit, and I'm glad I did. They turned out really tasty. The crust was crisp and the filling was soft, tart, and sweet - but not too sweet. Enjoy!

Snowball Cookies
These little gems are known by many names - Mexican Wedding Cakes, Russian Tea Cookies, Snowdrops, etc. Whatever you call them, they are delicious, and to me they scream Christmas! I was first introduced to these when I was dating my husband. They are his mother's favorite Christmas cookie and I see why. They have very few ingredients, but are so nutty and crumbly and delicious, and of course they look like little snowballs! The dough is not like your traditional sugar or chocolate chip cookie, so don't be alarmed. These are easy to make and look very festive on a plate of goodies. Give them a try!

Old-fashioned Apple Pie
I realize it has been awhile since I have posted, but we have been so busy lately! Among many other things, we have been busy preparing for our first time hosting Thanksgiving! My in-laws are coming into town and we are super excited (and a little nervous) to take on the big job of preparing the Thanksgiving feast. In planning what pies to make, we decided to nix poor Apple Pie. I felt bad for the pie, so I decided we'd just have to make one before Thanksgiving! So Sunday my sister came up, which gave me an excuse to bake a pie, and we tried Martha Stewart's "Old-fashioned Apple Pie". This is your traditional, double-crust, heaping apple pie and it was delicious! If you've decided to keep on Apple Pie for Thanksgiving, give this one a try!
