Texas Sheet Cake

Ohhh yeah.  Texas Sheet Cake, baby.  So moist and delcious.  This is a fairly simple cake with simple ingredients and a few odd-ball steps like boiling butter and cocoa together.  Don't be alarmed, it comes together very easily and is a great dessert to bring to a party or feed a crowd because it makes a lot!  This recipe comes from my mother-in-law and it's a winner!  Enjoy!



Texas Sheet Cake

Cake:
2 c. flour
2 c. sugar
1/2 tsp. salt
2 T. butter
1 c. water
5 T. cocoa
2 eggs, beaten
1/2 c. buttermilk
1 tsp. soda
1 tsp. vanilla

Frosting:
1/2 c. butter (1 stick)
4 T. cocoa
1/3 c. milk
1 box powdered sugar (about 3 3/4 cups)
1 c. chopped nuts (pecans or walnuts are good)
1 tsp. vanilla

Cake: Preheat oven to 350 degrees.  In a large bowl, sift together flour, sugar, and salt. Set aside.  In a small saucepan, melt butter, water, and cocoa and bring to a boil.  Pour over the flour mixture and do not stir!  Set aside.

In another bowl, mix together eggs, buttermilk, soda, and vanilla.  Pour over the other mixture and mix well to combine.  Spread evenly onto a greased cookie sheet and bake at 350 for 20-25 minutes, or until completely set and toothpick inserted into the center comes out clean.

Frosting:  About 5 minutes before cake is done, melt butter, cocoa, and milk together.  Do not bring to a boil.  Add sugar, nuts and vanilla and stir to combine.

Remove cake from oven and immediately spread frosting evenly over the cake.  Let cool before slicing and serving.
