Slow Cooker Pulled Pork

If you saw my last post (does anyone read this blog anymore? i don't blame you if you've given up), you knew this was coming. I decided to try some pulled pork the other day and it did not disappoint! I bought a huge pork roast a couple weeks ago, because it was cheap, and I stuck it in the freezer while I decided what to do with it. I saw this recipe for pulled pork on a blog and I decided to give it a go. Of course it made a ton, so I froze the leftovers in ziploc bags - so we can have this a few more times! This is the real deal here. The pork is ridiculously tender and the sauce has so much flavor. Give this a try! It was soo delicious.

This definitely has a kick to it, so if you aren't a huge fan of spicy, cut the cayenne pepper back. I liked the spice, but if I were to make it for a group, I would cut the cayenne pepper in half, fyi.

2 medium onions, chopped
1 c. ketchup
2/3 c. cider vinegar
1/2 c. packed brown sugar
1/2 c. tomato paste
4 T. paprika
1/2 T. cayenne pepper
4 T. Worcestershire sauce
7 tsp. salt
3 tsp. black pepper
5 lb. pork butt, cut into 2 pieces
rolls or buns, for serving

In a large crockpot, combine all ingredients except the pork (and buns). Stir together until well combined. Add pork, place the lid on and cook on low for 8 hours, until pork is tender and falls off the bone.

Take 2 forks and shred the pork. Place back in the slow cooker with the sauce. Stir well to combine and serve on rolls or buns.

Serves: a LOT
