Black Beans {a la Cafe Rio}

These beans are delicious!  We love them in tacos, burritos, taco salad, or just on their own.  They are a total breeze to put together and turn plain old black beans into something totally amazing!

Cafe Rio-Style Black Beans

2 T. olive oil
2 cloves garlic, minced
1 tsp. ground cumin
2 15-oz. cans black beans, rinsed and drained
1 1/3 c. tomato juice
1/2 tsp. salt
2 T. fresh chopped cilantro

In a skillet, heat olive oil over medium high heat.  Add garlic and cumin and cook until you can smell it.  Add beans, tomato juice, and salt.  Continually stir until heated through.  Just before serving, stir in the cilantro.
